Ingredients:
- 1 large or 2 small blue eggplant;
- 1-2 eggs;
- 3-5 tablespoons of vegetable or olive oil for frying;
- salt to taste;
- ground black pepper, paprika, any dried seasoning - to taste;
- 0.5 cups of breadcrumbs;
- 0.5 cups of grated hard cheese.
